A Favorite Sunrise Landing Recipe

Banana Pecan Bread 2 eggs, beaten 1 cup sugar 1 stick butter 3 ripe bananas, mashed 2 cups flour 1 teaspoon baking soda 1 teaspoon salt 1 teaspoon vanilla 1 teaspoon orange zest ¾ cup pecans, toasted and chopped ¼ cup orange juice Cream butter and sugar. Add eggs and mashed bananas – beat till foamy. Add flour, baking soda, salt, vanilla, orange juice and orange zest. Stir in pecans. Bake in large greased loaf pan at 350 degrees for one hour, or until inserted toothpick comes out clean. Cool for 10 minutes and remove from pan. I don't usually post recipes found in published cookbooks, unless I significantly alter or modify them. I am making an exception for this one, originally found on pages 20 & 21 of the Williams-Sonoma "Muffins" Book (a fabulous book), as guests have repeatedly asked for it. I have slightly altered the directions & ingredients from the original. 2 cups all purpose flour 2 tablespoons baking powder 1/2 teaspoon baking soda scant teaspoon salt 1/3 cup sugar 1/4 cup cold unsalted butter (1/2 stick) 1 cup buttermilk 1 teaspoon vanilla extract 3/4 cup semi-sweet chocolate chips Measure flour, baking powder, baking soda, salt and sugar into mixing bowl, and stir thoroughly. Cut butter into small chunks and cut into dry ingredients with a pastry cutter or knife until mixture is coarse and granular in texture. Add chocolate chips and mix. Breakfast Enchiladas

This is a favorite recipe at Sunrise Landing Bed and Breakfast.  Originally I found it on-line at MyRecipes.com. While I usually tinker with recipes and make them my own creation, this one has required very little tinkering. I do change the filling,  at times, in order to make it a vegetarian recipe, and there are any number of varieties one can create. One can also substitute evaporated whole milk for the half and half.
